This summer I've been having fun channeling my inner mixologist and whipping up various cocktail recipes as a fun "happy hour" activity. It's a nice refreshing treat to bring down to the beach or sip on the porch.
Over Canada Day weekend I adapted this recipe using a fresh mint plant from my Mom's garden and some spicy ginger beer (for an extra kick!) They are soooo refreshing and the hint of ginger is soothing on the throat. Plus, I love any excuse to drink out of a copper mug (which are pretty and keep your drink super cold). I got my set of four mugs from HomeSense (pictured here from Pier1).
Ingredients (per mug)
A shot of vodka (or go for the double)
1/2 freshly squeezed lime (more or less to taste, I like mine limey so I use the full half)
5 oz of Ginger Beer (I used The Great Jamaican Ginger Beer which is pretty spicy..it's an acquired taste so you might prefer original ginger beer)
Fresh mint and lime to garnish
Directions (easy peasy)
Fill each copper mug with ice
Pour in vodka, lime juice, and ginger beer
Mix well to combine all ingredients
Stir in fresh mint leaves
Add a sprig of mint and lime wedge for garnish
